Roasted Garlic Artichoke Bread

I hope you are doing well, staying healthy, and nurturing yourselves during this quarantine.

This at-home bread recipe is so easy to make, contains minimal ingredients, and you don’t knead the dough, either. I wanted to share this with you in case you’re in knead of a little activity. ;)

A little back story about this recipe:

My mom and I always buy this wonderful local artichoke bread when we visit Pescadero, California. It’s just a thing we always do together. Now that we’re still in quarantine and we have to stay within 5 miles of our house, we haven’t been able to go to the coast and buy the bread.

Instead, my mom decided to make her own version of the bread. *Insert all bread memes here*

We decided to add some roasted garlic cloves to the mix to really amp of the flavor. And oh did it deliver! This bread is packed with flavor, has a crispy, crunchy crust and a soft dough.

Ingredients

  • 3 cups unbleached white flour

  • 1 1/2 tsp salt

  • 1/4 tsp instant yeast

  • 1 1/2 cups water

  • 1/2 cup roasted garlic cloves

  • 1/2 cup canned artichoke hearts


Instructions

Add the flour, yeast, and salt into a bowl and mix to blend. Next, add the artichoke hearts and roasted garlic and mix to blend.

Stir in the water and mix until it is shaggy. Tip: Use the back of your spoon to mix it easier.

Cover your bowl with saran wrap and let it sit on the counter at room temperature for 16-18 hours.

The next day, add a little flour to the dough and fold the dough onto itself.

In another bowl (or pan), add a piece of parchment paper with a little flour on it. Place the dough on top, cover with saran wrap, and let it rise for another 1 -1.5 hours.

Preheat the oven and a dutch oven together at 450ºF for 30 minutes.

Then, take the dutch oven out and place the dough with the parchment paper inside and cover it with the lid.

Bake for 30 minutes.

Next, remove the lid and drizzle the top with olive oil.

Bake an additional 10-15 minutes.

Finally, cool the bread on a rack for 1 hour so the bread can set before slicing. (It continues to cook after you take it out of the oven so be sure to not skip this step.)
